Broiled Salmon

  1. Brine the fish in a 9% salt solution (1T salt in 1C water) for 10 minutes to reduce albumin exudation. Rinse off the brining solution and pat the fish dry.
  2. Melt the butter and combine with the oil, Worcestershire, lemon juice, white wine, garlic salt and fines herbs.
  3. Place the salmon skin-side down on a greased baking sheet or broiler pan. Baste with the butter sauce and broil for 3 minutes. Flip the salmon skin-side up, baste again, and broil for 3 more minutes.
  4. Plate and serve warm.
